194.2 - Luscious Easy Key Lime Pie Cheesecake

Last night I was craving some key lime pie, so I went online to find something quick and easy. After some alterations, I made up a recipe that gives you a luscious pie with only 184 calories per slice. Yum!!

Breakfast/Snack - 3 Tbsp. cream of wheat farina cooked with 3/4 cup water and dash of salt, 1 cup frozen strawberries and 1/2 cup frozen blackberries cooked with the creamy wheat, 24 oz. water

Lunch - 1 piece Easy Key Lime Pie Cheesecake (recipe below), 1 cup baby carrots, 4 Triscuit reduced fat crackers, 1 wedge Laughing Cow creamy swiss cheese, about 2/3 of El Monterey bean and cheese burrito
Total calories - 501

Snack#1 - 1 package (6 sandwich crackers) Austin pb & j crackers, 24 oz. water
Total calories - 190

Dinner - 1-3/4 cup steamable cut green beans, 2 cups Cap'n Crunch Peanut Butter crunch cereal, 8 oz. 2% milk, 24 oz. water
Total calories - 493

Easy Key Lime Pie Cheesecake

I was craving some key lime pie last night, and felt inspired to create a quick pie with ready-made graham cracker crust. I looked online for such a thing, found a few recipes, made my own alterations and voila! Awesome and easy pie!!

1 regular package of sugar-free lime gelatin
1 cup water & 1 cup ice
1 8oz. package of fat-free cream cheese
2 cups Cool Whip whipped topping
1 lime, use the zest and about 1 Tbsp. of its juice

184 calories per slice (1/8 of the pie) WOW!!!

Heat one cup water in the microwave to boiling. Stir in the lime gelatin until it dissolves. Then pour in the ice and stir until the ice is melted in. Put the jello in the fridge, but check it every 15 minutes, because it's already cooled off because of the ice and it will set up quickly. You want to pull it out when it has the consistency of egg whites. Meanwhile, get the cream cheese out, put it in a bowl and heat it a little in the microwave, just so it will soften, maybe do 20 seconds. Now, whip the cream cheese in the mixing bowl. When the lime jello is ready (it's the consistency of egg whites), mix it into the cream cheese. Add the lime zest and the cool whip and stir everything together. Now pour it into the graham cracker crust. It should really pile up. You can put all of it in the pie, or save out a little in case there is too much to fit in the pie shell. But the calorie estimate is based on using all of the ingredients, FYI.

  1. That's it, Girlie - kepp on going :-). And your pie looks very yummy. Lora came over yesterday afternoon and we processed 13 QUARTS of salsa for her. It might be gone by Thanksgiving - her family eats that all the time she says.
