192.6 - Where Did the Calories Go?

Man, I used to be able to eat over 2000 calories for a 2lb-a-week weight loss, but no more. I did a decent workout today, and I still only had a 1588 calorie allowance at my current weight. Sometimes skinny sucks. I think I'm out of the 2lb-a-week weight loss category, and into the 1lb-a-week weight loss group. 'Cause 1600 just ain't enough. No wonder the last 50 comes off harder than the first 50!

Breakfast/Snack - 3 Tbsp. creamy wheat farina cooked with 3/4 cup water, dash of salt, and 1 cup frozen strawberries; 1 thin slice Land o Frost smoked ham
Total calories - 185

Lunch - 12 oz. Great Value V-8 style 100% vegetable juice, 3 Triscuit reduced fat crackers, 1 wedge garlic and herb Laughing Cow cheese, 1 slice Strawberry Cheesecake Pie, 24 oz. water
Total calories - 340

Snack #1 - 2 Austin pb & j sandwich crackers, 1 slice Papa Murphy's Taco Grande pizza, 24 oz. water, 4 pieces popcorn chicken from Walmart deli
Total calories - 481

Dinner - 2 oz dry or 1-1/2 cups cooked Great Value wheat rotini pasta, 1/2 cup Yummy Alfredo Sauce (recipe below), 1 cup Great Value California mix veggies, 1/4 slice Strawberry Cheesecake Pie
Total calories - 421

Dessert - 1/4 of Connor's leftover sandwich, 3/4 cup Kroger Deluxe Artisan Vanilla Bean ice cream, 3/4 cup frozen blackberries & 1/4 cup frozen pineapple heated and put on the ice cream, 16 oz. water
Total calories - 388

Yummy Alfredo Sauce - I tweaked my basic recipe a little, and I like this even better:
4 Tbsp or 1/4 cup of Great Value Cardio Choice buttery spread, which is generic Smart Balance
1/4 cup white flour
2 cups skim milk
2 cups 2% milk
2 Tbsp. cornstarch
1-1/2 cup finely shredded parmesan cheese (not the canned powder)
1/2 tsp. salt
1/4 tsp. ground nutmeg (a traditional alfredo sauce ingredient)

Gather all the ingredients together first, so you can keep a constant eye on the sauce while you cook. Melt the butter in the bottom of the pan, then stir in the flour, making a roux (a cooked mixture of flour and fat used as a thickening agent in a soup or a sauce.) Gradually stir in 1 cup of the milk, blending it well with the roux. Add the cornstarch to the remaining milk, blending well. Gradually stir in the rest of the milk, adding about 1 cup at a time, pausing between cups to let the sauce thicken. When all the milk has been added and the sauce is thick and bubbly, stir in the parmesan cheese, salt and nutmeg, and let the cheese melt well into the sauce, continually stirring to keep the sauce from burning to the bottom of the pan. Enjoy!
