The ice rink opened back up yesterday, but I was so busy, that all I got to do was go over and watch the figure skating club practice. I was very busy today, too, but I made it in time to get a few minutes on the ice. I'll post something more in-depth tomorrow. Right now, I can barely keep my eyes open.

I was really in a snacking mood today, and just ate up the calories! I definitely had to restrain myself a lot. But maybe today's food fest will help my body kick this plateau it's on, in the long run. Oh, I just realized, I bet it's soon going to be that "time of the month." Duh!

Breakfast - 32 oz. water with exercising, 1 pluot (a plum/apricot hybrid), 4 tablespoons creamy wheat cooked with 1 cup water and dash of salt, 1 cup frozen blackberries cooked with the creamy wheat, 2 Schwan's Quick Taters, 1 Schwan's Pretzel Poppers, the crusts of Connor's PB & J sandwich
Total calories - 561

Snack #1 - 24 oz. water, 1/2 Schwan's Quick Taters, 1 wedge Laughing Cow Light swiss cheese
Total calories - 54

Lunch - 1 wedge Laughing Cow Light swiss cheese, 7 Triscuit Reduced Fat crackers, 1 package (6 cracker sandwiches) Austin PB & J cracker sandwiches (Dude, these are totally addictive. I used to eat GOBS of these things, sometimes 6 or 8 packages a day!)

Snack #2 - 8 mini Quaker Vanilla Creme Brulee rice cakes

Dinner - My sister Sue posted a Broiled Tilapia Parmesan recipe on HWHL a while back, and my family loves it! Well, at least the teenagers and adults do. Connor, not so much. So, tonight I had 6 oz. of tilapia with the sauce, 1 cup of herbed rice, 1-1/4 cup frozen green beans reheated, 2 ears of corn on the cob, 2 tsp. Smart Balance Light, 1/2 piece of white bread, 20 oz. of water

Dessert - Alison's Pantry peach turnovers/mini-pies - 2 (total of 4oz.), and 1/4 cup of Homemade Mint Chocolate Chip Ice Cream (recipe below)
Total calories - 399

Mint Chocolate Chip Ice Cream Homemade

1 Cup 2% milk
3/4 Cup white sugar
2 Cups whipping cream (the liquid, not actual whip cream)
1/4 tsp. pure peppermint extract
a few drops of green food coloring
4 oz. chopped semi-sweet chocolate, or 4 oz. mini semi-sweet chocolate chips

Makes about 6-3/4 cups ice cream. 1/2 cup serving has 238 calories. Woah! But it tastes heavenly!

Mix the sugar into the milk until it dissoves. Then, mix in the whipping cream, the food coloring and the peppermint extract. Pour this mixture into the tabletop ice cream machine. Run it until the ice cream is the consistency of soft-serve ice-cream. Then pour in the chocolate, and mix just a few more minutes until the ice cream is really thick and begins to bunch up at the top.

If you haven't used a countertop ice cream machine, go read this HWHL post I did about how to use one. It's so easy! Much more convenient than the kind that uses rock salt. Here is another frozen yogurt recipe.

This was NOT the fat-free recipe, to say the least, but it was soooo yummy, and got snarfed up really quickly. Tomorrow, I might reverse the ratios and use 2 cups milk, and 1 cup whipping cream. You could definitely taste the cream in this recipe, it really sat heavy on your tongue. I might also leave out the choc. chips, so people can just add them as a topping. 4oz. of chips was way too many, you might want to try just 2oz. Dani, my 13-year-old girl, suggested we crush up some oreo cookies instead of choc chips. Ooooh! That's a really good idea, too!!! I love the mint cookie flavor of ice cream.
