189.2 - Broke 190! And Then I Leapt Off the Wagon

I broke 190 this morning. Wahoo! And then it was the Halloween Trunk or Treat tonight. I not only fell off the wagon, I made a flying leap off the wagon and nearly ate my weight in Halloween candy and yummy soups at the ward Halloween party dinner. Mmmm, I still have fond memories.

190.2 - My First Year of 39

I am officially 39 today. 39 for the next ten years. Ha! It's my last year in my 30's, and I broke 200 before my birthday. Met that goal! My next goal is to weigh 160 by the 1st of June. I think it's doable, but with my really low calorie range these days because I weight less now, it's going to be harder than I thought it was. I just don't want to eat in the 2lb-loss/week zone any more. It's usually only 1500 to 1600 calories, and I want to eat more in the 1800 to 2000 calorie range.

190.2 - Freedom From The Pills


I was doing my Walmart shopping today, and the diet pill/diet shakes aisle caught my attention. You know, I've lost almost 50 pounds without any of that stuff. Just watching what I eat and exercising. Simple. Harder, yes, to control yourself, but simple. I have sympathy for people who struggle with losing weight, I really do. I've been there so, so, so many times myself. But I think the whole "miracle pill/miracle diet" mentality is all part of the problem. Just deal with the reality of calories in and calories out. Really. Just accept what food does to your body and work within those parameters. Quit trying to find a sneaky escape route around it. It is incredibly freeing! Looking at all those products made me feel sadness, like looking at so many people locked in a prison.

192.0 - Relax, I'm Just Slowing Down a Little

Ladies, ladies, relax. I'm not quitting! I'm just simplifying some things, so that I can make room in my life to expand my crafting business. I'm still being a healthy chick, I still feel strong and confident, and not discouraged. I'm just making a conscious decision to put some of my mental energy towards something else, that's all. I'll still participate in the HWHL blog, no worries, still exercise, which I love doing believe it or not. I still really, really, really like counting my calories. I'm just weird that way. It's the secretly anal part of my brain. That's why I have all the obnoxious stats here on my blog. I just love data!

I didn't exercise the past few days, because I literally spent every waking minute working on my craft business or helping the kids. In fact, I never went to bed last night, and only got a nap this afternoon after church. Crazy! But I will now go get a good night's rest, thank you very much.

193.0 - The Honeymoon Is Over

I've reached a point where the honeymoon is over. I just have too many things going on to be intensely obsessed all day about my food and exercise like I used to. Plus, I'm spending a ton of time at the computer managing my eBay auctions, and sitting at the computer makes me much more snacky. So, it's reached a challenging phase for me, where I just can't devote as much time to losing weight as I used to. I'll still do my exercising and calorie tracking, but I'll be losing weight at a slower rate than I used to, and definitely not earning as much HWHL points as I used to. Those HWHL ladies will be relieved. And, can I just say again that I CANNOT live on 1500 calories? Phooey on that! I want my 2000 calories!!! Feed me Seymour!!

194.0 - The Long Run Down the Road

Okay, I am just getting way too pressed for time to keep writing down every day what I eat here on my blog. It's enough that I track it online. So, I'm going back to just stats for a while. I think I'll keep posting recipes, because I know some of you really enjoy that. But I'm going to stop the repetive details for a while. I've done enough detail that you get a general idea of the kinds of foods that I eat. I've just got too much going on, and I need to simplify whenever I can.

Mom, you asked what my longterm plans are now that I've broken 200. Well, I'm just going to keep going! I want to get down to 150, and be a size 12. That's my ultimate goal, one that I think is achievable. Frankly, I feel pretty good right now. I feel fit and fantastic every day. I like how I look in the mirror, and I can now shop in the regular-size clothes section of the store. Wahoo! But I know I can drop even more weight, because 190 still isn't as healthy as I could be. 150 is a much better place for me to be in, for the health of my heart and other organs. While my weight loss has slowed down, I'm sure I'll be able to achieve my goal by next summer. I would like to break 185 before the end of the year, maybe be in a size 14. We'll see. It might take getting down to the 170's for me to be a size 14. I just know that my size 16's are comfortable, and some of them are even a little loose.

192.6 - Where Did the Calories Go?

Man, I used to be able to eat over 2000 calories for a 2lb-a-week weight loss, but no more. I did a decent workout today, and I still only had a 1588 calorie allowance at my current weight. Sometimes skinny sucks. I think I'm out of the 2lb-a-week weight loss category, and into the 1lb-a-week weight loss group. 'Cause 1600 just ain't enough. No wonder the last 50 comes off harder than the first 50!

Dessert - 1/4 of Connor's leftover sandwich, 3/4 cup Kroger Deluxe Artisan Vanilla Bean ice cream, 3/4 cup frozen blackberries & 1/4 cup frozen pineapple heated and put on the ice cream, 16 oz. water

Yummy Alfredo Sauce - I tweaked my basic recipe a little, and I like this even better:
4 Tbsp or 1/4 cup of Great Value Cardio Choice buttery spread, which is generic Smart Balance
1/4 cup white flour
2 cups skim milk
2 cups 2% milk
2 Tbsp. cornstarch
1-1/2 cup finely shredded parmesan cheese (not the canned powder)
1/2 tsp. salt
1/4 tsp. ground nutmeg (a traditional alfredo sauce ingredient)

Gather all the ingredients together first, so you can keep a constant eye on the sauce while you cook. Melt the butter in the bottom of the pan, then stir in the flour, making a roux (a cooked mixture of flour and fat used as a thickening agent in a soup or a sauce.) Gradually stir in 1 cup of the milk, blending it well with the roux. Add the cornstarch to the remaining milk, blending well. Gradually stir in the rest of the milk, adding about 1 cup at a time, pausing between cups to let the sauce thicken. When all the milk has been added and the sauce is thick and bubbly, stir in the parmesan cheese, salt and nutmeg, and let the cheese melt well into the sauce, continually stirring to keep the sauce from burning to the bottom of the pan. 193.8 - Diet Food, Who Needs It?

In the beginning of this weight loss effort, at the end of June, I was really strict about what types of foods I ate. If I could take calories out of something, I did. Sue, you remember that no fat, low salt popcorn I made for our movie outing, and snuck into the theater in a really big purse? How tasteless it was? Well, I've since relaxed a little about food. I still make substitutions now and then, especially when it doesn't affect the taste or consistency of a recipe, but I've found that some things just aren't worth it for me. I'll take my popcorn with canola oil and salt now, thank you. And milk? I drink 2%. The extra 20 calories a cup are totally worth it to me.

I manage all this with portion sizes. If I want to eat a "naughty" food, yet still be within my calorie range between weight loss and weight maintenance, I know I have to eat a small portion of that "naughty" food, or really cut back on some of my other meals. That's it, it's not that complicated. And if you are counting calories, you become really aware of what calories foods have in general, and you begin to instinctively cut back on some things, and increase other things like fresh fruits (the low-cal kind like berries and apples) and vegetables. Speaking of which, veggies tend to be the thing that really make a meal "pop" in flavor. Have a "blah" sandwich? Jazz it up with lettuce, tomato, and red onion. Same thing for a wheat tortilla and fat free refried bean burrito. You've taken something plain, and made it taste wonderful with the infinite flavors found in veggies, yet you've hardly added any calories. Veggies are your friends!!

Exercise - no official exercise, but I tell you what, I literally packed and unpacked HALF of my craftroom to take to the all-day crop, and that was a LOT of heavy lifting. I have a professional-grade diecutting machine, and well over a hundred dies, most of them weighing about 5 pounds each. Plus, I hauled most of my paper, imagine at least 15 boxes about 40 pounds each. 194.2 - Luscious Easy Key Lime Pie Cheesecake

Last night I was craving some key lime pie, so I went online to find something quick and easy. After some alterations, I made up a recipe that gives you a luscious pie with only 184 calories per slice. Yum!!

Easy Key Lime Pie Cheesecake

I was craving some key lime pie last night, and felt inspired to create a quick pie with ready-made graham cracker crust. I looked online for such a thing, found a few recipes, made my own alterations and voila! Awesome and easy pie!!

1 regular package of sugar-free lime gelatin
1 cup water & 1 cup ice
1 8oz. package of fat-free cream cheese
2 cups Cool Whip whipped topping
1 lime, use the zest and about 1 Tbsp. of its juice

184 calories per slice (1/8 of the pie) WOW!!!

Heat one cup water in the microwave to boiling. Stir in the lime gelatin until it dissolves. Then pour in the ice and stir until the ice is melted in. Put the jello in the fridge, but check it every 15 minutes, because it's already cooled off because of the ice and it will set up quickly. You want to pull it out when it has the consistency of egg whites. Meanwhile, get the cream cheese out, put it in a bowl and heat it a little in the microwave, just so it will soften, maybe do 20 seconds. Now, whip the cream cheese in the mixing bowl. When the lime jello is ready (it's the consistency of egg whites), mix it into the cream cheese. Add the lime zest and the cool whip and stir everything together. Now pour it into the graham cracker crust. It should really pile up. You can put all of it in the pie, or save out a little in case there is too much to fit in the pie shell. But the calorie estimate is based on using all of the ingredients, FYI.

194.0 - In Awe of the Serious Runners

"I decided that if I was going to be a serious runner, that I'd better whittle down my time, so I could do a 5K in 30 minutes or less, eventually. So, while my son was at swim lessons this afternoon, I took myself over to one of the treadmills, and punched in a higher speed than I've done before - 4.6 mph. Laughable, I know, but I gotta start somewhere, and if I'm ever gonna break 30 min on a 5K, I'm going to have to start consistently running at a 6mph pace. Anyway, I did 4.6 mph for about 3/4 mile, then had to slow down to a 3.0 mph walk for 1/4 mile, then I punched in 5.0 mph, and did that for 1/2 mile, then walked 3.5 mph for 1/4 mile, then punched in 5.5 mph for 1/4 mile, and cooled down at 3.0 mph for 1/4 mile. I couldn't imagine doing a 6mph pace for 30 min, but then when I ran the 5K in Cokeville three months ago, I couldn't imagine running the entire 5K at all. So, hopefully, there will be progress in the future.

Which brings me to my point. For those of you {Marci} who can even run a half-marathon, forget how long it takes, I am in awe. I feel like a little kindergartener waving around their stick-figure drawing next to the masterpiece hanging on the wall. I am not worthy! I am not worthy! (Imagine prostrate bowing). But I don't find it discouraging. I just feel determined to improve my time."

Easy Chicken & Rice Casserole -

3 cups dry rice, cooked with about 6-1/2 cups water, it made about 12 cups cooked rice (This was a little overkill on the rice. You could probably do 2-1/4 to 2-1/2 cups dry, then cook with a little over double the water.)
13 oz. or 3 medium cooked boneless skinless chicken breasts, chopped
2 10oz. cans of cream of chicken condensed soup
10oz. skim milk (fill one of the empty soup cans with milk, then mix into the soup)
8 oz. shredded cheddar cheese

Cook the rice in the water. When done, spread the rice in a 9x13 pan. Spread the chicken over the top of the rice. Mix the two cans of soup with the milk, then pour this sauce over the top of the rice. Finally, spread the cheese over the top, and cook and 375 until everything is heated through, and the cheese has a nice crust. I think it was about 30 minutes, maybe less.

194.6 - The Death Run

Well, since I couldn't do the 6K run in Utah, I decided to do my own here in Rock Springs by myself. I took my car and plotted out my route. I started out at home, drove until the trip odometer rolled over 1.88 miles, then turned around and drove home. As I drove back, I had butterflies in my stomach, "What am I thinking? I've never run on non-flat terrain. And I've never gone over 3 miles." But I was determined to do it, to finish, even if it was really hard. I was in and out, doing last minute little things, and as I passed Gil at the table, he said, "So, have you finished your Death Run yet?" See, my kids are noticing. Okay, 6K is kind of wimpy compared to a half-marathon or a full-blown marathon, but today, 6K is a Death Run. It feels almost noble. I got all my gear on, (Asics running shoes ready and me, all bundled up for the cold Wyoming wind) and got Dani to take pictures of me. I started the timer on my watch, and off I went!

Now it's pics with my cell phone camera, passing the library on my way. I couldn't believe it at this point. I thought, "I'm doing this, I'm really doing this! I can keep running and not have to stop!" It did get harder, though, and a few times I lost focus and walked a few stops or stopped a few beats to take a pic with my cell phone. But, really, I pretty much ran the whole way. It seems incredible to me. I remember the 5K I walked/ran with Sue in Cokeville 2-1/2 months and 25 pounds ago. I definitely could run that one now, and probably beat "stroller chicks"! Kind of goofy, I know, to gauge yourself by "stroller chicks" in a race, but you gotta take your triumphs where you can find them, even the little ones.

Victory!! My time? 57 minutes. I know, don't laugh, I'm a turtle, and it didn't help that I kept stopping and taking pics with my cell phone. But it still felt awesome!

193.8 - Just Too Blankety-Blank Busy

Where have I been? Workin' hard on my eBay stuff, and trying to be the mom and run the house, too. I hardly have time at the end of the day to blog anymore. That's all. Don't panic.

I cracked a little tonight and sat down and actually watched a little tv, and indulged in some major dessert. I sure could use a mental health day. Did I say I was going to run my own 6K tomorrow, because I wound up not being able to participate in the race? Hah! We'll see what happens when I wake up in the morning. Calories - 118 per 1 oz. (28g) cookie or dough, melon-size ball of dough is about 20g.

Cream the butter and sugars. Mix in the eggs, vanilla, salt & soda. Mix in the flour. I made melon-size balls of dough, then baked them at 325 for 8 minutes.

Peach Crisp - This is a monster recipe. Cut it in half for regular-size families.

19 cups peeled and sliced fresh peaches (place each one in boiling water for a minute or two, then dunk them in cold water and the peel should come right off)
6 to 8 Tablespoons cornstarch (8 Tbsp. is 1/2 cup)
Topping:
2 sticks butter (1/2 each)
1-1/2 cups brown sugar
1 cup white flour
1 cup quick-cooking oats
1-1/2 tsp. ground cinnamon
1-1/2 tsp. ground nutmeg

I put all the sliced peaches in a huge turkey pan I have, that is just like 2 9x13 pans put together, so if you cut this recipe in half, use a 9x13 pan or similar. Mix the peaches with the cornstarch. In a separate bowl, cut the butter and sugar together, then add the flour, oats and spices. Sprinkle the topping over the peaches and bake at 375 for 40 to 50 min. It's done when the topping is nice and brown.

195.0 - The Sunday Exercise Dilemma

Audrey, you must have been zoning in on my brainwaves, because I was just thinking the same thing about exercising indoors during the long winter months ahead when I can't go for a walk around the neighborhood, and had come to just about the same conclusion. I thought a good stretching/yoga routine would be really nice to do on Sundays, maybe listening to talks or scriptures. Now if I could just find my exercise mat...

195.8 - Killer Swim

I'm starting to get obsessed with exercising. I want those two extra Cat's Challenge points for exercising for an hour straight! I think exercising for an hour straight might be my new standard. Today Zen had the day off, so I took advantage of it and went to the gym to swim laps. I challenged myself to do an entire mile, which I knew would take me about an hour. I did a mile in 51 minutes! Okay, I know that's still pretty slow, but I was excited because that's a much faster pace than I had since the last time I did any serious swimming, maybe three or four weeks ago. I complete the hour with 37 laps, about 1.156 miles per hour.
